Quick and Easy Instant Rava Idli Recipe for a Healthy Breakfast

What is Rava Idli?

Ingredients

  • 1 cup semolina (rava/sooji)
  • 1 cup sour curd (yogurt)
  • 1/2 tsp baking soda or Eno fruit salt
  • Salt to taste
  • Water as required
  • For tempering:
    • 1 tbsp vegetable oil
    • 1/2 tsp mustard seeds
    • 1/2 tsp cumin seeds
    • A pinch of asafoetida (hing)
    • green chili, finely chopped
    • A few curry leaves
    • 1/4 cup chopped coriander leaves
    • 1/4 cup grated carrot (optional)
    • 1/4 cup chopped cashews (optional)

Instructions

  1. Prepare the Tempering:
    • Heat oil in a pan.
    • Add mustard seeds, cumin seeds, asafoetida, green chili, and curry leaves.
    • Once the mustard seeds start to splutter, add the semolina.
    • Roast the semolina on a low flame until it becomes aromatic and changes color slightly.
    • Transfer the roasted semolina to a mixing bowl and let it cool.
  2. Make the Batter:
    • To the cooled semolina, add the curd and mix well.
    • Gradually add water to get a thick batter consistency.
    • Add salt, coriander leaves, grated carrot, and cashews if using.
    • Let the batter rest for 10-15 minutes.
  3. Steam the Idlis:
    • Right before steaming, add baking soda or Eno to the batter and mix gently.
    • Grease the idli molds with a little oil.
    • Pour the batter into the molds and steam for 10-12 minutes or until a toothpick inserted comes out clean.
  4. Serve Hot:
    • Serve the hot Rava Idlis with coconut chutney or sambar.
