How to Make Idly in 15 Minutes with Rice Flour and Curd

Idly is a popular South Indian breakfast dish made with fermented rice and lentil batter. It is steamed in special moulds and served with chutney and sambar. To make idly quickly, you can use rice flour and sour curd instead of soaking and grinding the rice and lentils. Here are the steps to make idly for bachelor student quickly:

  • In a large bowl, take 2 cups of rice flour and ¼ cup of semolina (rava). Add salt to taste and mix well.
  • Add 1 cup of sour curd and mix well. Gradually add water and whisk to make a smooth and thick batter. The batter should have a dropping consistency, not too thick or thin.
  • Cover the bowl and let it rest for 10 minutes. Meanwhile, grease the idly moulds with some oil and boil water in a steamer or pressure cooker.
  • After 10 minutes, add ½ teaspoon of baking soda or fruit salt (eno) to the batter and mix gently. Do not overmix the batter.
  • Spoon the batter into the idly moulds and place them in the steamer or pressure cooker. Steam for 10 to 12 minutes on high flame. If using a pressure cooker, do not put the whistle.
  • Once done, remove the idly moulds from the steamer or pressure cooker and let them cool slightly. Then, use a spoon or knife to demould the idlies.
  • Serve the hot and soft idlies with coconut chutney and sambar. You can also store the leftover idlies in an airtight container and reheat them in a microwave or steamer before serving.
